Soup season

This is Carlie's favorite Soup
easy to make and soooo good.




Sopa de
Tortilla
Barb Elder


2 Medium tomatoes Chopped (11/2 cups)
1 medium onion, chopped (1/2 cup)
3 cloves of garlic, crushed
1 teaspoon vegetable oil
6 cups chicken broth
½ teaspoon salt
1/4 teaspoon pepper
12 corn tortillas (5 or 6 inches in diameter)
1/4 cup vegetable oil
3 avocados, peeled , pitted and chopped
1 3/4 cups shredded Mexican Cheese (7ounces)
2, limes, each cut into 6 wedges
1. Place tomatoes, onion and garlic in food processor. Cover and process until smooth.
Heat tomato mixture and 1 teaspoon oil to boiling in 3-quart saucepan: reduce heat. Simmer
uncovered about 10 minutes, stirring occasionally, until sauce has thickened. Stir in broth, salt
and pepper. Heat to boiling: reduce heat to medium. Cover and simmer 15 minutes: remove from heat.
2 Cut tortillas in half, then cut crosswise into ½ inch strips. Heat 1/4 cup oil in 10 inch nonstick skillet over medium-high heat. Cook about 20 tortilla strips at a time in oil 3 to 4 minutes, stirring frequently, until golden brown. Remove with slotted spoon, drain on paper towels. ( I purchase the tortilla strips at Bajo. They are already cooked and cheap)
3. To serve, reheat soup and stir in avocados. Sprinkle with tortilla strips, and cheese. I buy pico digalo at Bajo and add it to the soup. Serve with lime wedges. Serves 6.

Geoff and Ryan HALO 3

Geoff and his friend Ryan Reese have been playing HALO 3. It came out Monday at midnight. Geoff got home from school Tuesday around noon. (Geoff goes to school at College of Eastern Utah in Price.) They have been playing all day and night. I will never understand it. It must be a guy thing. Yes they have stopped to eat, shower, and maybe a little sleep but not much.

Our back yard


Carlie had a after school swimming pool party. Mckay Strong, Haydin Finlinson, Elliot Power, and Tanner ?, from her school (Liahona) come to swim. If you look hard you can see Tanner doing a flip off the diving board.

Our Cabin

This is the Elder's family cabin. It is in the mountians of Fairview Utah. We built it about four years ago. We go there as much as we can. We have spent every Christmas there after we built it. Some how Santa finds his way. We love to snowmoble, fourwheel, hike, swim in the pond, play games, watch movies, and just be together. We love taking our family and friends there. If you can't find us at home you can find us at our cabin.

My Dad

This is my dad in front of a old house that his sister, my Aunt Cloie lived in when he was young. He remembers eating thanksgiving diner here with his sister and her family. My father lost his parents when he was young. He lived with his sisters and Aunt Cloie was always good to him.

MORE OF MY SISTERS TRIP.
This is in front of the Sacramento Temple. On our Sisters trip we try to go to a Temple together if their is one near. Then we take our pictures together in front of the temple. The Sacramento Temple is a year old. I believe that it is one of the most beautiful temples in side. While in the temple I felt the love of the Lord and that I was truly bless to be in the Temple with my Sisters. This is a blessing that my Mother never had. (She was the only member of the Church in her family) To have all of us worthy to go and wanting to go. I love my sisters! They are one of my best friends. Thank you Debbie and Judy.

WE MIGHT GET WET
Sept. 15,2007
My sisters and I went on a sisters trip to Calif. to see our dad. Debbie, (Arizona) Judy (Utah) and myself (Utah). While we were there we went whitewater rafting on the American river near Coloma. We had a great time. We went on a 5 hour trip. The weather was great the water was cold. We had so much fun. We laughed, and we almost cried. And yes there were time that we were scared.

About us

The Elder family is made up of Mom (Barbara), Dad (Scott), three daughters (Jessie Carlie and Rylie), one son (Geoff) and one son-in-law (Jason). We love to spend time together as a family having fun, especially at our cabin in the mountains near Fairview, Utah. We're big game players and love to play Ligretto and Ticket to Ride. The guys (and Carlie's) latest game obsession is Risk. We're dreading the end of summer because it means we'll have to vacate our pool that we've spent so much time in this year.

Barbara is a crafty and creative lady. She has a new craft room that she hasn't hesitated putting to use and just finished making a "happy dress." We'll post pictures soon. She also loves people, and people love her. Everywhere she goes she makes new friends.

Scott works hard and plays hard. His favorite weekends are spent at the cabin exploring new trails on his four wheeler and watching movies with his family. When he's not at the cabin, he's planning his next cabin trip. He's always full of witty comments and creative ideas. Like his wife, people just love him.

Jessie enjoys reading, writing and photography. She absolutely loves her job as circulation manager/associate editor at Utah Valley Magazine. Her four years of hard work at BYU paid off in helping her land this dream job. Now she spends her time working, reading and experimenting with new recipes.

Jason is Jessie's husband who also enjoys reading. They can often be found reading in bed together late into the night. He works as a software application programer and loves helping Carlie and Rylie on their math homework. He also enjoys the fruits of his wifes recipe experiments.

Geoff is currently a student at the College of Eastern Utah in Price studying computer graphics and Web design. He loves his classes and loves playing with his new Apple laptop. It must be a family thing, because everybody loves Geoff. He can often be found challenging his dad or Jason to a game of pool, which - of course - he always wins.

Carlie is a 14-year-old who loves fashion and reading. She dances 8 to 10 hours a week at The Pointe dance studio. Her nose can often be found burried in a book. Her latest book addiction is The Uglies series. She's read the Twilight series twice, in less than a month.

Rylie is our little fish and spent most of her summer days in the pool with her friends, family or just by herself. She also dances and spends about 4 hours a week in the studio. She loves helping Jason grill every Sunday and is turning into quite the culinary artist herself.
