Yummy on a cold fall day.

WHITE BEAN CHILI
1lb. great no. white beans - 5 cans
8C Chicken stock
1 T vegetable oil
2 C chopped onion
4m garlic cloves
2 cans - 4 oz- green chiles
2T ground cumin
11/2 T dried oregano
1/4t ground cloves
1/4t cayene powder
3C montery jack cheese
sour cream
salsa
cilantro 4- 8 chicken breasts
heat together - add beans last as to not overcook
just before serving you can add 1 C sour cream, cheese & cilantro to soup and heat untl mixed OR add to each serving.
I prefer to add some to the soup - it is yummy but more calories.
garnish with chips, more cheese, cilantro, and salsa
SALSA
1/3 head cilantro
2 cans mexican stewed tomatoes
6-8 roma tomatoes
1 onion
2 limes
1 t salt
1 T granulated garlic
2 t chili seeds
In a food processor, chop cilantro & stewed tomatoes at the same time. process onions & tomatoes but not as fine - there will be some big pieces
add lime juice, salt, garlic, chili to taste
