Bruschetta

8 to 10 cups tomatoes, cubed
1/2 cup of toasted pine nuts
olive oil to coat
5 to 6 minced garlic cloves
2 Tab. cut fresh basil leaves
salt and pepper to taste
1/2 to 34 grated Parmesan cheese

Mix, olive oil, salt, pepper and garlic in a bowl. Cut tomatoes and place them in a sieve to drain the liquid, then add the oil to mixture. Fold in pine nuts and basil at the end. Serve on garlic toast rounds.

Garlic Toast

1/2 cup butter softened
1 cup Parmesan cheese
1 minced garlic clove
Mix ingredients and spread on cut toast rounds. Broil on foiled baking sheet until golden. Serve with and Italian food such as Bruschetta.
