Crepes for lunch with the ladies. March 7 2016

 I made Macaroons for everyone. Thanks to Jackie for the wonderful class she taught. 
 My sweet friend Lynette made this for me last year for my birthday and I love it. The little black doll is a reminder of the black doll we got while serving our missions together.

While in Cabo we went to Senor Sweets a few time for Crepes and Gelato so we decided to have a ladies luncheon and make them our self.  Here is Jackie's recipe for the Crepes.

4 Large Eggs
1 1/2 cup Milk
2 T Oil or melted Butter 
1 Cup Flour
1/2 tsp Salt

In a blender, mix the above ingredients until smooth. 
Cover and let sit at least half and hour, or put in refrigerator and keep overnight.
This keeps them from being bubbly and full of holes when cooked.
Heat a 8 or 10" non-stick frying pan and spray with Pam. 
Pour about 1/3 C. batter into pan and swirl around.
Cook until dry on the top.
The first one often sticks a little, just throw it away. 
Butter each one a little if your are stacking them.
Serve as desired.
